    Great blog. Thankfully one of my inspiring moments involved seeing you walk down the street of Le Be with a handful of mise to help out in a bind and you not pausing a moment or hesitating to do what you could. Moments later I turned to a young cook that was helping me carry it all and said "That is what you call a great chef." That to me speaks volumes.

    Wonderful post, truly wonderful. This is what we go through at school (I'm a culinary school student) - waves of despair punctuated by bouts of confidence and bouts of ennui. It's a roller coaster ride. An exhilarating one, for the most part.

    And I wouldn't miss it for the world.

    What wonderful food moments, Michael! Thanks for sharing! I think some people just don't realize how many spectacular food-related events happen throughout their lives - a wonderful dining experience, a piece of candy that melts in your mouth, that chance meeting with an award-winning chef.

    Like my first experience at Le Bernardin, when Eric came out to shake my hand and mention how nice it was to have ME in HIS dining room!

    Or the moment one of our catering customers exclaimed, with a bite of our pesto-encrusted wild salmon on his fork, how he'd never talk bad about salmon again!

    Memorable food experiences indeed.

    May you continue to have many more Eureka! moments!

    As a 28 year veteran of many professional kitchens, my own and others, I've really hit a burnout in the last year. Currently, while recovering from surgery and taking the months off to repair my body (much caused by long days of heavy work)I've been searching for inspiration, seeking that fire that drove me in the early years.
