    I'm amazed that you would pull off such an amazing dish with what was on hand in an impromptu situation.
    We were also fortunate (but not into such great detail) to experience cocoa pods in Venezuela. We sat in on a demo (totally in Spanish unfortunately for us) and when they passed the pod around, Chef K and I tasted the seeds. They were just as you described them. What an incredible experience for you to witness the full process.

    Chocolate to me is one of the most fascinating things to work with, experiment with, and eat. I can't even imagine how intense and real seeing all of that must have been. I must say, I'm quite jealous and hope to have an opportunity similar to that someday.
