It's nice meeting you at the Baldor event yesterday. As one who has a chemistry degree but zero experience with spherification, I was really excited about the possibility of incorporating the idea in the petit gateaux/macarons we do at work! I feel like I can finally apply something i learnt in college at work. :)Thanks for talking with us so patiently. I hope i didnt come across too "excited/crazy". it happens when i get too excited some time. Especially about food. I am wondering if you can share your pdf file that you used in the demo yesterday?
