Your manifesto killed me. Wonderful idea, wish to some day be part of this type of experience.

    I like the menu

and a great manifesto, as a former pastry chef I understand it all too well.

Alas, I wish I could have been there, but then, I fear, that I would literally have been "killed by dessert". I could certainly think of worse ways to go, though, and not too many better!

Your manifesto was a wonderfully eloquent and dignified description of a profession that, however frustrating it can be, is always a gratifying gift. If only there were photos!

i adore the concept of Migoya's Napoleon Trimmings - a perfect little peek into our scrap-and-taste-test snack habits, along with Tosi's Cornflake Cookie Dough...

Thankfully, as a chef, I always wandered between the pastry shop and kitchen. My passion is baking bread and sometimes a sweet confection, but I love cooking as well...this is truly a different mind set and I appreciate the manifesto, wish I could of tasted the products!

    Come to Singapore!

Love this concept and the manifesto! I often wish I could order dessert first...how about a venture in Istanbul as well? =)

    Preach it brother!

I could be mistaken, but seems like many pastry chefs often feel the need to defend their craft....yearning for more recognition. After indulging in a meal, at times several courses, and perhaps a bottle of wine or two...some guests might be simply too full for dessert. I am no foodie for sure. You may think you are providing the happy ending, but we all have different tastes.
