Overview
Welcome to my blog.
The purpose of this project is to share personal observations and investigations from the kitchen of Le Bernardin, one of the most highly regarded restaurants in New York City. I hope to share the day to day insights, thought processes, recipes, and culinary inspiration, all from the unique perspective of my years of experience as a cook and pastry chef.
In these posts I will bring the reader along in the creation of new dishes and even the rediscovery of the old, not to mention the concepts, products, and people behind them. I hope to both demystify techniques and make them accessible for the amateur enthusiasts at home, as well as provide an exchange of information with my professional peers as well. I place a high value on such exchange, and I hope this project of documentation will also help me grow as a chef, too!
