For professional grade equipment, and hard to find tools (including the special egg topper), JB Prince in New York City is one of the best.
A good resource in New York City for equipment and ingredients specific to baking (such as the cylinder molds I like so much) is New York Cake and Baking Supply, located on West 22nd Street.
Ingredients
My primary source for high quality spices and "scientific" ingredients are Judy and Phillip at Terra Spice in Indiana.
Another good source, especially for rare, hard to find spices and an always growing line of hydrocolloids (like agar agar, gellan gum, carrageenan, etc.) is Jing Tio and his Le Sanctuaire in Santa Monica, CA. In addition to ingredients he also sells the most esoteric of kitchen equipment and tableware.
Specialty sugars, especially my favorite muscovado from Mauritius, can be found through India Tree.
In New York City, for spices, grains, and condiments of all kinds- especially those of India and the Middle East- visit Kalustyan's on Lexington Avenue in Murray Hill. They also carry an impressive array of sugars (incuding several jaggeries and palm sugars) and salts (I love the vanilla-infused and smoked varieties form Halen Mon in Wales).
